1 tsp. Urad dal
1-chopped Onion

Heat mustard oil in a pan and splutter some mustard seeds and curry leaves along with Urad dal.
Add the chopped onions and green chilies for a minute and finally add chopped bok choy.
Add salt and let it cook uncovered for about 7-8 minutes until vegetable becomes tender. Bok Choy is a watery vegetable so you have to wait till the water is completely removed.
Add egg now and mix everything together. Need to mix until egg is cooked completely. Serve with roti.
